Recipe: Meringue Cookies


Meringue Cookies:
  1. Whip 4 egg whites (from 4 large eggs) untill a little foamy.
  2. Add 1/8 tsp cream of tartar. Whip untill very foamy.
  3. Gradually add 50g sugar, a teaspoon at a time. Whip untill firm peak.
  4. Low speed add 1/4 tsp vanilla extract (and optional: 2 drops of food colouring).
  5. Whip untill stiff peak. Pipe on baking sheet.
  6. Bake at 105C for 60 minutes. Off, let cookies cool inside the oven.
  7. Store in airtight container.

Recipe: Simplified Red Bean Rice Dumplings 简化紅豆碱水粽


Alkaline water (or 10g lye water):
  1. Into a pot mix 190 water and 1/4 tsp baking soda.
  2. Bring it to boil, simmer for 5 minutes. Set aside to cool.

The rice:
  1. Rinse 250g glutinous rice, 2-3 times. Drain off the water.
  2. Into a steaming pan/tray, add glutinous rice, alkaline water and 3g oil. Mix
  3. Add water, about 15mm above the rice. Soak overnight or at least 6 hours.
  4. With water just enough to cover the rice, steam for 30 minutes (will normally poke a few holes between the rice for steam to escape).
  5. Fluff, steam another 20-30 minutes. 
  6. Set aside to cool a little.

Red Bean Dumplings
  • compact a layer of steamed rice
  • add red bean paste
  • compact with another layer of steamed rice.

Plain Pyramid Dumplings (Made 1.5-portion)
  • Place cling film on pyramid mould (homemade using cardboard).
  • Compact with steamed rice.
  • Eat it with your favourite sauce. I like it with kaya or melted plam sugar.

If you like it warm, do steam for a few minutes.






Recipe: Dalgona Coffee

"Dalgona coffee is a beverage made by whipping equal proportions of instant coffee powder, sugar, and hot water until it becomes creamy and then adding it to cold or hot milk. Occasionally, it is topped with coffee powder, cocoa, crumbled biscuits, or honey."

Nee used 2 tbsp each of instant coffee powder, sugar, and hot water.

Recipe: Easy Kuih Bahulu 烤鸡蛋糕

Recently came across this very cute little looking bahulu made using sandwich maker.

I remembered buying bahulu from AEON, always willing to wait for the freshly made batch, the one still baking in the oven. Kakak will then pesan not to close the cover first ya... cover only when they are completely cool dik. Haha, we love bahulu, especially my big baby!

After going through a number of recipes, I realised that it is just the baked version of 鸡蛋糕 Steamed Sponge Cake. Hence,  the existing recipe was modified to below steps,
  1. High speed, beat 4 large eggs (50g each), 140g sugar and 1/16 tsp salt till pale white, ribbon stage *when you lift the whisk over the mixture, the batter should fall slowly with visible lines appeared (speed 8, +/- 15 minutes). 
  2. Medium speed, add 1 tbsp oil and 1 tsp vanilla extract.
  3. Low speed, add 150g self raising flour in 3 batches.
  4. Using a spatula, scrap the bottom and sides, mix till incorporated.

Sandwich Maker Bahulu
  1. Preheat sandwich maker for 3 minutes. *used Tefal
  2. Scoop 1 full tbsp of batter, drop it into a section. Repeat for 3 other sections.
  3. Remove immediately once the light turned green. 
  4. Bahulu can be reheated with toaster.
Oven Baked Bahulu
  1. Preheat oven to 200C.
  2. Fill baking cups with batter, about 3/4 cup.
  3. Bake for 15-20 minutes *depending on size.
  4. If toothpick comes out clean, the cupcake is done.

Recipe: Chef Nee's Favourite Agar-agar


  1. Into a pot stir and mix 15g of agar-agar powder with 1300g of water.
  2. High heat, add pandan leaves. Keep stirring and bring water to boil.
  3. Low heat, add 210g of sugar (and optional: a few drops of food colouring). Mix until completely dissolved.
  4. Remove pandan leaves. 
  5. Scoop mixture to your favourite moulds. 
  6. Set aside until they are completely cool.
  7. Chill them in the fridge.
