Recipe: Lemon Loaf


125g softened, unsalted butter
225g caster sugar
225g self raising four (shifted)
125g milk
2 eggs
1 grated zest of lemon
1/2 tsp salt
  1. Cream butter and sugar. Beat in eggs one at a time. Add milk, mix well.
  2. Add flour, together with baking powder, salt. Beat until incorporated.
  3. Mix in zest. Pour into greased 4 x 8 and bake for 60mins at 177 Celsius.

for the glaze
60-80g caster sugar (adjust to your liking)
Juice of 1 lemon
  1. Melt mixture of glaze.
  2. Spoon glaze over loaf before removing from pan.
