Recipe from Joy of Baking

Crispy Oatmeal Cookies
  • 1 cup (226 grams) unsalted butter, room temperature
  • 1 cup (200 grams) granulated white sugar
  • 2/3 cup (140 grams) firmly packed light brown sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 2 cups (260 grams) all purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups old-fashioned rolled oats
  • 1 1/2 cups crisp rice cereal
  • 1 1/2 cups chocolate chips

Oatmeal Raisin Cookies
I love this one!!

  • 1 cup (226 grams) unsalted butter, room temperature
  • 1 cup (210 grams) light or dark brown sugar
  • 1/3 cup (65 grams) granulated white sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract (I added another teaspoon)
  • 1 1/2 cups (195 grams) all purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 3 cups old-fashioned rolled oats
  • 1 cup dark raisins

Melting Moments
  • 1 1/2 cups (195 grams) all purpose flour
  • 1/2 cup (60 grams) cornstarch (corn flour)
  • 1/4 teaspoon salt
  • 1/4 cup (30 grams) confectioners sugar (powdered or icing)
  • 1 cup (227 grams) unsalted butter, room temperature
  • 1 teaspoon pure vanillaextract

Topping:
  • 1/2 cup (60 grams) confectioners sugar (powdered or icing)
