Recipe: Chef Nee's Favourite Agar-agar


  1. Into a pot stir and mix 15g of agar-agar powder with 1300g of water.
  2. High heat, add pandan leaves. Keep stirring and bring water to boil.
  3. Low heat, add 210g of sugar (and optional: a few drops of food colouring). Mix until completely dissolved.
  4. Remove pandan leaves. 
  5. Scoop mixture to your favourite moulds. 
  6. Set aside until they are completely cool.
  7. Chill them in the fridge.
