Mother's Day During the Covid-19 Pandemic

On Mother's Day, we took a short walk in a park nearby... our first walk in a park since January 2020.  For me, it was no longer just a walk... it was a walk of appreciation.

Appreciate the colourful flowers, green bushes and trees. Appreciate the fresh air and sunshine. Appreciate the sound of nature.  Appreciate and Love our Mother Earth!

Recipe: Easy Moist Banana Cake

I love easy recipes.  I have been making many roundsss of this super easy and super moist Banana Cake. I love the smell of Banana Cake baking in the oven!

Ingredients *adapted from https://www.bestrecipes.com.au/recipes/best-ever-banana-cake-recipe/aygu9ocq:

• 225g self raising flour
• 1 tsp baking soda
• 170g sugar
• pinch of salt *1/16 tsp
• 4-5 medium banana (peeled, 400-500g) *like some chunks in it 
• 100g vegetable oil
• 4 XL-jumbo eggs (240-270g *shell on) 
• 1 tsp vanilla extract

3 Simple Steps:

1. Into a mixing bowl, mix all ingredients till well combine *hand whisk works great too!
2. Pour batter into 20cm round tin *used 20cm chiffon tin, didn't grease.
3. Bake at 150C preheated oven for 60 minutes.
