Recipe: Mini Kuih Koci



Kuih Koci has been in my list for sometime. 

Now that our pandan plant has grown so well and I do have some banana leaves in the backyard...let's do it!

Initially I thought it won't taste as good substituting fresh grated coconut with desiccated coconut. But hmmm, they are yummy! With the addition of coconut cream in both the filling and dough, this is the Kuih Koci I've been craving for, Yummy

Kuih Koci, 20 pieces

Filling:
  • 2 pandan leaves, cut into 5cm pieces.
  • 3/8 tsp salt
  • 100g palm sugar (used palm sugar block, cut into thin slices as picture shown)
  • 30g dark brown sugar
  • 10g sugar
  • 150g coconut cream
  • 120g desiccated coconut (or 200g fresh grated coconut, omit coconut cream)
Steps:
  1. Into a pot, add all ingredients above.
  2. Medium heat, stir and mix (about 5 mins). 
  3. Once the sugar has fully melted, add starch mixture (1 tbsp tapioca starch + 2 tsbp water).
  4. Mix well, set aside to cool. Discard pandan leaves.







Dough:
  1. Into a mixing bowl, add 90g coconut cream + 330 glutinous rice flour + 20g sugar. Mix a little.
  2. Add 180g water/pandan juice (used 180g blue pea water:1g dried blue pea flower + 210g boiling water, simmer for a few minutes).
  3. Add more water, a little at a time till smooth dough is formed.
*Texture of dough is determined by temperature of water/juice. 
  • Use boiling water for very chewy dough (you will have pliable dough hence easier to wrap too). 
  • Use 70C water, for chewy dough. 
  • Use room temperature water for soft dough.
We like it soft or slightly chewy but NOT too chewy.








Banana leaves:
  1. Wipe clean and cut into 14 x 16cm x 20 pieces.
  2. Blanch in hot water for a few seconds (to soften the leaves).




Assembling:
  • 40 vege oil (coating dough)
  1. Divide dough and filling into 20 pieces each.
  2. Roll dough piece into a ball. 
  3. Lightly grease both palms. Flatten dough to oval shape.
  4. Place filling in the middle (I placed it just like the photo shown)
  5. Pinch and seal the sides. 
  6. Coat with some vege oil. 
  7. Wrap it with banana leave. a) Place it in the middle of banana leave *the dull side. b) Fold in the bottom, then the top (photo shown). c) Press the middle with index fingers (photo shown). d) Flip (bottom) down side up (photo shown). e) Flip (top) down side up (photo shown). f) Fold left side down (photo shown). Cut and trim access if necessary. g) Fold right side down (photo shown). Cut and trim excess if necessary.
  8. Place on steamer tray.
  9. Steam with medium high heat, 10-12 minutes.
