I use same/similar recipe for banana pancakes too. For pancakes, you may use plain flour or self raising flour. Do use self raising flour if you prefer fluffy pancakes.
Either deep fry or pan fry, they are equally delicious. Yum, can't wait for the next round.
This is a super easy recipe which you may mash and mix with hand whisk or fork. But we normally need 2-portion and prefer the aid of a mixer.
Steps:
- Into a mixing bowl, add 580g very ripe banana flesh, 60g sugar, 150g plain flour (or self raising flour for pancake).
- Low speed, mix with paddle attachment for about 20 seconds.
- Med speed, mix till well combined *I like to have some chunky bits in it.
- For Kuih Kodok, drop a tablespoonful of batter to hot oil. Deep fry till brown.
- For Banana Pancakes, drop 2 tablespoons of batter to greased non-stick pan. Med heat fry till both sides are browned.
