Mei Mei has been asking for donuts. Apparently her friend ate some yummy donuts and they have been chatting about it.
I'm not a fan of donuts, the sweetness is always not to my liking. But for the children, I'll do it.
It has been years since we had the last round. After comparing a few recipes, decided to give Michael's a go.
Prepared an overnight dough. Woke up early, used half portion of the dough for breakfast. Coated half of the donuts with caster sugar, another half with addition of cinnamon powder. Overdid the sugar, hence tapping some away.
Hmm, this is a keeper. It is delicious and easy to make. These donuts are light and airy *lighter than Coles' but not Big Apple's.
Instead of individual parchment paper, I used a single silicon sheet. Also, substituting vanilla sugar with combination of vanilla extract and caster sugar.

- 600g flour *used 480g
- 40g caster sugar *used 32g
- 11g yeast *used 1/8 tsp for overnight dough
- 8g salt *used 1 tsp
- 2 medium eggs *used 1 jumbo egg 68g
- 8g vanilla sugar *used 6g vanilla extract + 6g sugar
- 260g milk *used 202g (208g - 6g )
- 100g butter *used 80g
Coating
- 1 kg extra fine sugar *used 1/4 cup caster sugar for 1/2 portion of donuts, the other half with addition of cinnamon powder
- 1/2 tsp salt *omitted
- 8g vanilla sugar *omitted
Method
- Into a bow, add all ingredients.
- Mix to combine. Knead for 10 minutes.
- Rest till double. Lightly knead.
- Dust work surface. Roll and flatten to 1.2cm thickness.
- Cut out the rounds, place on individual parchment paper. *did 3" outer, 1" inner and placed them on silicon sheet.
- Cover, rest till double. *placed them inside the oven, with a cup of hot water.
- Fry at medium heat 160C till golden brown on both sides.
- Once the donuts cool slightly, coat them with sugar or glaze them to your liking.

Ingredients: (half portion is just nice for us)
- 2 (8 g) packages fast rising yeast
- 1 cup lukewarm water
- 3 tablespoons sugar
- 1 egg, well beaten
- 1/2 teaspoon cinnamon
- 1/3 cup melted butter
- 1 teaspoon vanilla
- 1 teaspoon salt
- 2 1/2 cups flour (use More if too sticky)
- cooking oil (for frying)
- Mix yeast, water and sugar.
- Wait until bubbles form in mixture.
- Add egg, butter, cinnamon, vanilla, salt and flour.
- Mix to form dough.
- Knead dough for 1 minute.
- Roll out and cut out donuts.
- Allow to rise for 30 minutes on floured surface.
- Fry in oil until golden brown. Oil should be approximately 390°F.
- Coat in cinnamon & sugar mixture or your favorite topping.
- These freeze very well after they have fully cooled, if there are any left.
