This is an option if you run out of bread flour or wheat starch. Not perfect, but if you are desperate and can go flexible, give it a try!
I made them out of curiosity and it was fun!
Bread flour (extract gluten ref: https://youtu.be/9nCYhlj5Z1c)
- Mix 60g water and 100g plain flour (mine with 10.9% protein).
- Knead just to form dough ball.
- Cover, rest for 20 minutes.
- Wash dough ball with water.
- Wash until it weighs 50g (yield estimation: 50g high gluten dough, with 20g water).
- For every 250g bread flour, I used 220g plain flour + 50g high gluten dough and reduce 20g of water/liquid required.
Wheat starch
- Set aside the white starchy water until it is clear on the top with starch sitting on the bottom.
- Pour away the clear water and you will have some wet starch.
- I used this to coat meat and make silver needle (rat tail) noodles.
