Homemade green pea powder:
- Defrost and dry frozen peas.
- Spread peas on baking tray.
- Bake at preheated oven 170C 40-45 minutes.
- Set aside to cool.
- Grind to fine powder.
*for 500g frozen peas, you will get +/-125g roasted peas.
*cookies baked from 'pure green pea powder' don't taste the same. My guess is, store bought green pea powder has other ingredients in it.
- 130g green pea powder
- 70g caster/icing sugar
- 1/4 tsp salt (used slightly less)
- 170g all purpose flour
- 1 1/2 tsp baking powder (used 100g self raising + 70g all purpose flour, omit baking powder)
- 100ml peanut/vege oil
Egg wash: 1/2 yolk + 1/4 tsp milk/water
Method:
*Into a bowl, add all ingredients, mix well.
*Scoop and weigh 8g dough.
*Roll/cut dough into desired shape.
*Coat with egg wash.
*Bake for 15-18 mins at 170 Celsius.
