Recipe: Dorayaki


Ingredients:
  • 2 large eggs
  • 70 g caster sugar
  • 1 tsp honey
  • 30 ml milk
  • 120 g plain flour (or 45g + 75 self raising flour, omit baking powder)
  • 1 tsb baking powder
  • 1/4 tsp baking soda
  • 1/16 tsp salt
Fillings:
Nutella / Peanut Butter/ Kaya / Red Bean Paste

Method:
  1. Whisk eggs until frothy, add sugar and whisk until foamy.
  2. Add honey and milk, mix well.
  3. Add dry ingredients whisk until well combined (do not overmix).
  4. Cover batter and set aside for 30 mins.
  5. Pour 1/8 cup of batter to a nonstick pan. Cook with med heat until bubbles appear, flip to the other side and cook until brown. 
  6. Put all hot pancakes into a container, cover up to keep it moist. 
  7. Spread a pancake with filling, press the edges of two pancakes to seal up into a Dorayaki!

Recipe: Easy Frosting


Fluffy White Frosting
1 cup caster sugar
1/3 cup water
1/4 tsp cream of tartar
2 egg whites
1 tsp vanilla extract

Directions:
  • In a saucepan, stir together the sugar, water and cream of tartar. Cook over medium-high heat until the sugar is dissolved and the mixture is bubbly.
  • In a medium mixing bowl, whip the egg whites and vanilla to soft peaks. Gradually add the sugar mixture while whipping constantly until stiff peaks form, about 7 to 10 minutes. Frost the cake of your choice.

and I would always use this instead whenever I am out of powdered sugar., and I do like the sweet, caramel taste.

Condensed Milk Frosting:
  1. 57 g unsweetened chocolate bar
  2. 200 ml sweetened condensed milk (susu pekat)
  3. 1 pinch salt
  4. 1 tbsp water
  5. 1/2 tsp vanilla extract
  • Melt (1) with (2) and (3).
  • Stir in (4), then (5).
